- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon powdered ginger
- 1 teaspoon nutmeg
- 1 cup chopped plums
- 1 cup caster sugar
- 1 cup butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup sliced plums
- 2 tablespoon sugar mixed with 1 teaspoon cinnamon and 1 tablespoon butter
- Toasted pecans and powdered sugar to garnish, optional
- Whipped cream or Greek yogurt, optional
- Honey, optional

Step 1: Preheat the oven to 350°F. Grease and line an 8-inch cake tin.
Step 2: Place the flour, baking powder, ginger, nutmeg and chopped plums into a medium-sized bowl and toss to combine.
Step 3: Cream the butter into a large bowl and beat until light and fluffy. Add the sugar slowly and beat about two minutes on medium-high speed. Add in the egg and vanilla extract. Mix until well combined and smooth, about one minute on medium-high speed.
Step 4: Fold in the flour and plum mixture by hand using a rubber spatula, being careful not to mash up the plums.
Step 5: Tip the cake batter into your greased cake tin, arrange the sliced plums on top of the cake. Scatter the sugar-cinnamon mixture on top of the plums.
Step 6: Bake for 40-45 minutes until mixture rises and becomes golden (or when an inserted skewer in the centre comes out clean). Leave to cool in the cake tin for at least an hour before transferring to a wire rack to cool completely.
Step 7: Dust with powdered sugar and serve with whipped cream or Greek yogurt with honey and toasted pecans.
